Now that the holidays are coming to a close for the year, I know that we’ve all got our fair share of leftover turkey and/or ham in our freezers. This is one of my FAVORITE times of year for this VERY reason. And considering there was a little bit of a communication failure over Christmas Eve and Christmas dinner, I’ve ended up with a BUNCH of leftovers.

Last weekend when my family and I made the 3 hour round-trip out of the way just for a coffee cake, we had the delight of meeting the woman behind said amazing coffee cakes after several years of ordering from her. She was the SWEETEST lady ever and as we were picking up our cakes from her home, she was in the middle of cooking what she called ‘wash day’ dinner.

This morning I woke up to a rather quiet house after FINALLY managing to get a decent bit of sleep last night. The excitement around the holidays, along with all the coming and going from my house, usually means several restless nights for me.
