Somehow last night ended up being an impromptu wine and cheese night. I think it's because I needed a good excuse to crack open a nice bottle of red. Long story short, I woke up this morning to a fridge stocked with leftover cheeses. With having 'sweet' for breakfast for a few days now, I decided it was time to switch it up and make a nice savory bite for myself.

Colorful foods are where it's at and I've had my eye on colored cauliflower for a couple of years now. A lot of people think that colored cauliflower is made using food coloring, but they couldn't be more wrong! These rainbow cauliflowers are natural to nature and have been hanging around farmer's markets for a long time now.

And well... it finally happened. I got my hands on not only 1 color of cauliflower, but on 3 different colors; lime/green, orange/cheddar, and you guessed it - purple! It finally seems like the cool weather has settled here in Austin Texas. Cool weather. Not cold weather. I'll take anything below the 80's we had around Thanksgiving though, especially as we get closer and closer to Christmas. So, between the cool weather and a second round of what I've deemed 'the plague' descending on the house, I thought that a nice hearty warm soup would be just what the doctor ordered!

Keto Low-Carb Chicken Egg Foo Young

So... my power went out for over an hour this morning and I was really starting to go into panic mode. My chicken for this Egg Foo Young was sitting... par cooked in my pressure cooker for the whole time. Thankfully, it still turned out. I guess the pressure inside the pot kept it at a safe temperature until the power came back on and I could restart the cooking process.

Even with the flub-up with the power, these Egg Foo Young egg cakes turned out amazing. It's hard to say when or where the first time was that I had Egg Foo Young. All I know is that it's yummy delicious heavenly goodness in the form of an Asian flavor powerbomb of eggy and vegetable bliss...
