Tomato Cobbler

I know what you're thinking. Tomato Cobbler?

Yes, and yes.

Lately, I've seen a lot of savory takes on treats that most would consider desserts or sweets. So, this is my savory take on a cobbler. I mean... a tomato is technically a fruit anyway. Right? Right!

"Knowledge is knowing a tomato is a fruit. Wisdom is not putting it into a fruit salad."

Well, at least I'm not putting the tomatoes into a fruit salad.

Tomatoes are one of my favorite things. I'm pretty sure there are not many circumstances to which I would turn one down. Pie, soup, ketchup, baked, raw, stuffed... I think I've had tomatoes in just about every manner in which you could eat possibly eat them...

Loaded Green Goddess Sweet Potato Fries

For me homegating is the way to go with any sport. Who doesn't like tailgating from the comfort of home? It's the best of both worlds! I get to watch my favorite teams live on television without the hassle of the hustle and bustle of crowds, lines, and over priced concession stand foods. Of course, to me, that's the best part - creating my own game day grub!

I always strive to put my own fun and healthful twist on what some might consider traditional. Fries and dips are always a staple of any good game day spread. So, today I give to you these rather guilt free, sophisticated, fiber full sweet potato fries.

My inspiration for this dish started with a stuffed sweet potato that I made a few weeks back. I had loaded a baked sweet potato up with sautéed spinach, black beans, and some homemade green goddess dressing. It was definitely not your typical baked potato, and was amazingly delicious. Skinny Turkey 'Pigs in a Blanket'

I'm not the world's biggest football fan. Okay, not a fan at all. But, I love my Longhorns (Hook'em!) and I adore the Superbowl, though If I'm being honest... it's mostly for the commercials, camaraderie, and food! Yes, yes, yes! I love, love, love game day food! I couldn't tell you exactly why either, but I think it has something to do with the fact that it's all snackable little bites of finger foods.

There's just something really awesome about eating tiny food. Maybe that's the girl in me. Or... the kid in me.

Anyway, every year when the big game rolls around I always love to try my hand at healthifying and/or making traditional game day foods both skinny and delicious.

Today, I'm going with 'pigs in a blanket' which of course is usually made using little pork sausages; giving them the 'pig' in 'pigs in a blanket'. However, turkey sausages are healthier and have a lot less fat and calories to them.

So does that make these... 'gobblers in blankets' or... 'turkey in blankets'?...

Skinny Chicken Caesar Wrap (Crock Pot)

I feel like I should start off by saying that I am usually anything but a caesar dressing fan. I would probably east just about any other sort of salad before I would even consider a caesar salad. I honestly can't say why either. I'm not sure if it's a texture issue, a taste issue, or if I'm just plain weird.

I'm thinking it's the the latter of the two.

I am also not a very big wrap fan. I suppose I'd rather eat a sandwich or a salad rather than the combination of the two. It must be a mental notion that the only things that belongs in tortillas are breakfast tacos and fajitas.

No matter the reason, I think I just changed my own mind with stepping outside of the box with these wonderful chicken caesar wraps...

Skinny Broccoli Cheese Soup

I gotta say, I'm a sucker for cheese! And I'm not cheese picky either, oh no-no. I will eat just about any kind of cheese that is out there. Blue, pink, soft, hard, sweet, sharp... You name it, I'll probably try it if I haven't already!

I've said it before, and I'll say it again... I'm weak for cheese. So what's a girl to do about this known weakness? Certainly not cut cheese out of my life. I mean... that's just cruel and unusual punishment.

Nope! This girl needs her cheese fix. So, instead I'll opt to pack as much veggies in with my cheese as I can and do a little Jedi mind trickery on myself.

What's better is now you don't have to feel guilty about indulging in it anymore. Most places I looked, a typical serving of one lasagna roll-up was anywhere between 350-550 calories. What?! That's madness!
