Mixed Berry Salad

March 20, 2014 Amanda Plott

This salad has been my lunch regularly for about two weeks now. I just can't get enough of it! Everything I love the most is in there. Fresh berries, blue cheese, spinach, and this amazing Energy Crunch Trail Mix. I found the mix at my local grocery store, HEB. It has soybeans, dried cranberries, almonds & pumpkin kernels.

When it started out, I was using a bottled dressing. But this week I decided to switch it up and make my own - which turned out fabulous and even more healthy!...

Caprese Stuffed Avocado

March 6, 2014 Amanda Plott

I have to be honest, I had a completely different post planned for today but... it just didn't turn out quite the way I wanted. Thankfully, I always have a plan b, c, d, e...

I'm a planner. What can I say?

My desk and home are full of lists, sticky notes, and note pads to keep me organized and as on top of things as I can be. I've even been told that my organization skills can even be a little... intimidating...

Roast Beef & Asparagus Roll-ups

February 24, 2014 Amanda Plott

I love asparagus. I seriously cannot wait for asparagus to come into season every year! Unfortunately, I am the only one under my roof that does enjoy it... as a result, most of my asparagus recipes will be intended for one or two servings.

The idea behind this recipe actually started with my mom a year or two ago. She had mentioned to me about how she had been wrapping roast beef around sautéed asparagus as a healthy sort of snack...

Healthified Asian Salad

February 18, 2014 Amanda Plott

I love a good asian style salad and yet haven't had one in quite a long time.

Many years ago when I was younger and my mother used to by an asian style salad kit. It was very tasty and one of our favorite things to eat along side any asian dish. Most commonly we would eat it with a bowl of hot and sour soup and some spring rolls. Yummy!...

Skinny Chocolate PBB Parfait

January 23, 2014 Amanda Plott

While my mom has been on the 'Get Forking Skinny Meal Plan', she decided that one of her favorite breakfasts/lunches ever is the Skinny PB&J Parfait. It's one of my favorites too.

So, with that in mind... I wanted to come up with another similar treat for her! Something that she wouldn't come up with on her own and that, once again, was just outside of her comfort zone.

What's better than peanut butter and chocolate?

Well, not much. If anything...

Italian Grinder (On a Stick)

January 21, 2014 Amanda Plott

Nearly at every party thrown, there is almost always a plate of prepared sandwiches. Mini subs, silver dollar, tea sandwiches... It doesn't matter which you pick, they are always a hit!

One of my favorite sandwiches is the Italian Grinder. It contains so many of my favorite things. Salami, cheese, peppers... pepperoni, more cheese... Mmm...

But, how can you make something like that light?...
