I think Chicken Spaghetti is a classic that almost all of us enjoy at one point or another in our childhood. While my mom claims to have made it a few times when I was a kid, I mostly remember trying it for the first time at my grandma’s house. Skinny 'Homer Simpson' Donuts

What can I say? I’m inspired by a lot of things in life. Growing up through the 90’s meant a lot of watching The Simpsons. And anytime you watch the show, there’s like a scene with Homer eating a donut. The Simpson donuts are a classic vanilla donut with pink frosting. So, I took one of my old favorite recipes and reworked it into this riff on Skinny 'Homer Simpson' Donuts!

I had come across a fun idea for a strawberry pop-tart pie, but.. to be completely honest with you, homemade pie crust scares me. Baking can be hard. Baking can be complicated. Baking can be exhausting. It’s no secret that baking isn’t my favorite thing to do. It intimidates and scares me a lot. Which is why I’m forcing myself to do a whole lot more of it. I guess you could say that I’m overcoming my fear one cake at a time.

Oh. My. Gosh. This Dark Chocolate 'Crazy Cake' is delicious, y’all! The first time I heard about ‘wacky cake’, I was more than a little skeptical. How can you make a good cake with no butter, eggs, or milk?! Well, as it turns out, there’s a couple of secrets to this cake that make it perfectly fluffy and delicious! In fact, it’s one of my favorite cakes. One of these simple swaps is using Mazola® Corn Oil in place of another oil or butter. I’ve been cooking and baking a lot more lately with corn oil. It was a lazy and rainy day yesterday, and after a long 'Fall break’ weekend that was filled with plenty of fun and excitement, it was a good day to rest. I’m honestly not sure I even got out of my pajamas, and neither did my daughter. Yep, that’s just how lazy we were. This Skinny Chicken Alfredo Dip was a perfect rainy day snacky sort of dinner.
