So, while it may be starting to cool off, it’s still very hot here. That being said as we slide into the end of August I am READY for Fall this year more than I even usually am. Which is saying a lot since Fall is probably my favorite season next to Spring - which we entirely skipped this year somehow and instead just went Winter straight into Summer. Bleh.

This Apple Pecan Jar Salad gives me all the vibes of Fall while also being light, cold, and crisp while we’re in the middle of this heat still. So it’s definitely a win-win situation. Artichoke Salad

I was looking for something light and bright, and that didn’t involve the stove, for dinner and maybe even lunch this week. This Artichoke Salad has some big Mediterranean vibes and it really is so simple and delicious to make. It also ends up being gluten free and vegetarian too! One of the best parts is, that this salad can be made ahead of time, and any leftovers make a great grab-and-go lunch.

This Artichoke Salad starts off with its namesake - artichokes. It’s then got loads of other tasty bits like roasted red bell, tomatoes, and garbanzo beans. Vegetarian Green Curry

I’ve been wanting to make a Vegetarian Green Curry for a good long while now, and today was finally the day. This curry starts off with onion and spices and quickly gets into veggies, tofu and even some chickpeas. The goal here was to load the curry up with as much veggie goodness as possible to make up for the lack of meat in it.

The end result is a curry that comes together really quickly and tastes amazing. The only thing I might do differently next time, is to add in some jalapeño for added spice and warmth. Every bite of this curry has new tastes and textures that all pair really well together…

Baked Buratta

Let me tell you guys something. I love cheese. It is my weakness. Not ice cream, or cookies, or cake - but cheese. Glorious cheese in just about any form. Sharp, sliced, shredded, fresh, soft, hard, crumbled. Any of it. All of it. I haven’t met a cheese that I don’t like, and I’ve never tried buratta before even though I’ve always wanted to.

Buratta is a pretty cool cheese. It’s basically a creamy spreadable cheese tucked away inside a skin of fresh mozzarella. So when you cut into it, the creamy cheese oozes out and it’s so so good. It’s almost too hot outside here to grill lately. Almost, but not quite. And being as my kiddo is in love with steak right now, it’s become a part of the weekly rotation. Vegetarian Cheeseburger Tater Tot Casserole

It’s been… a week. My kiddo is sick ahead of their final exams, decisions need to be made ahead of next year, and the world is on fire as far as I can see. It’s going to be a difficult next few days for the lost of us and I’m buckling up for this bumpy ride to continue.
