We’ve all seen that new tortilla trend that’s been going around, but sometimes a girl just wants to get a little naked. I’ve stripped the tortilla out of this all together and went with a large lettuce leaf instead. This makes this trend low carb, gluten free, and still every bit as delicious. It still has all the naughty bits, mainly the cheese and the bacon!

Greek Spinach & Feta Veggie Patties

It’s meatless. It’s Monday. It’s a meatless Monday! These Greek Spinach & Feta Veggie Patties are as tricky and as tasty as they come. I made these patties with a vegetarian ground plant-based ‘meat’ which looks like, tastes like, and cooks up just like ground beef. I loaded these quarter pound patties up with spinach, sun-dried tomatoes, and of course some feta cheese to give a little bit of a Greek or Mediterranean twist.
