Baked Feta

May 3, 2018 Amanda Plott
baked-feta4.jpg

I'm tired, y'all. It's the last few weeks of school until summer break and I am dragging my booty just as much (if not more) than my sweet little girl. I'm tired and the struggle to eat real food couldn't be any greater. It's so easy to talk yourself out of eating the right things, the good things, the healthier things. I have found one way to make it easier to not fall into that trap though, and that's by following the K.I.S.S. method.

Keep. It. Stupid. Simple.

This baked feta isn't fake. It's simple. It's a REAL dish. It's a REAL bite. It's REAL. It's RAW. And it is beautiful…

Halloumi Bake

May 1, 2018 Amanda Plott
halloumi-bake10.jpg

I used to be a rather picky eater. In fact, I was such a picky eater growing up that my mom and dad had to tell me that beef came from a 'beef tree' so that I would eat it. As I've gotten older, my tastes have changed. My mind has expanded. And my pallet continues to get more and more educated. That isn't to say that my mouth is snobby, just that I'm far more open to new things.

Take goat cheese for instance. I'm an avid cheese lover, and I've never met a cheese I didn't like, but I have often found myself questioning and unsure of goat cheese for some reason. Maybe I secretly deep down don't like goats? Whatever the reason, I try try try my best to stick it through, and when I do... I love goat cheese! So what's halloumi anyway? Well, it's goat cheese. And today I piled it high on this sausage and zucchini tomato sauce to make one bangin' low-carb dinner!…

Loaded Hummus

April 29, 2018 Amanda Plott
loaded-hummus7.jpg

Let's talk apps. No, not phone apps... edible apps. Appetizers! Sometimes, I have those days where I don't want to end it with a big huge meal. And today is one of those days. After spending almost all of yesterday wading around in the heat out at Pease Park here in Austin for Eeyore's Birthday, I just don't feel much like indulging in full on meals today.

So, a selection of cool and fresh snack bites sounds PERFECT. With hummus being one of my favorite snacks, I thought it would be the perfect time to make this Loaded Hummus; filling enough to be a light meal and light enough not to weigh me down…

Low-Carb Keto 'Inside-Out' Breakfast Burrito

April 27, 2018 Amanda Plott
low-carb-breakfast-burrito8.jpg

I'm trying to get myself back on the exercise bandwagon starting today. (And I'm pretty sure I nearly overdid it already!) Summer is on the way and I'd like to both look and feel my best during swimsuit season. So, to start my morning off right, I decided to make myself this little diddy right here.

This Low-Carb Keto 'Inside-Out' Breakfast Burrito is exactly what it sounds like. A breakfast burrito that uses the eggs as the wrap and is then loaded up with some of the usual suspects; bacon, cheese, pico, and even some turkey! Hence, inside-out burrito…

Shakshuka (Eggs in Purgatory)

April 25, 2018 Amanda Plott
shakshuka10.jpg

I've heard a lot over the past year or two about 'Eggs in Purgatory' or 'Shakshuka'. In fact, I've had several variations of Shashuka recipe ideas saved for a good long while now. I think I finally decided it was time to take a swing at it when I saw it featured once again on one of my favorite foodie shows - Parts Unknown with Anthony Bourdain.

There was something magical about watching Nigella Lawson making Eggs in Purgatory for Anthony Bourdain, and not just because I'm in love with both of them. But, more so because it just looked !@#$ing amazing. What can I say? I'm a Texas girl who loves spice and eggs…
