Breakfast Stuffed Sweet Potatoes

August 28, 2017 Amanda Plott
breakfast-sweetpotato.jpg

Well, we survived the wrath of Hurricane Harvey this past weekend here in Austin Texas. There were moments when I thought I would need an ark to get my daughter to school today, but that wasn't the case. Thankfully for us here, the rain was moderate and just light enough to continue absorbing into the ground and finding it's way to the overflows. The wind was the worst of it and is still going stronger than I would like. I'm fortunate though and know that not everyone in Texas was nearly as lucky. My heart goes out to all effected but this record setting giant.

Even though our power only went out very briefly here, the lighting (or lacking of) outside all weekend is what ultimately kept me from being able to get a new recipe out. So today, I'm back at it with the sky being perfectly bright and overcast for great natural lighting!...

Southwest Dinner Salad

August 24, 2017 Amanda Plott

Thank you Farm Rich for sponsoring this post. All thoughts are my own. Visit your local grocery store to pick up NEW Farm Rich snacks and your family favorites!

I can hardly believe that yesterday was the first day of my daughter going to second grade! Time just flies these days, even more so when it's time for back-to-school. It's a chaotic and unforgiving time of the year for any parent. That's why I'm all about simple meal solutions right now. And with it still hovering around 100 degrees F. here in Austin Texas right now, you know I'm opting for a nice big, cool, crunchy, veggie loaded salad.

This Southwest Dinner salad is no joke. It's big. It's hearty. And it's loaded up with plenty of goodness. It's really so sooo good...

We made it! I finally got back from our end of the summer spur of the moment vacation road trip across two states with just myself, my mom, and my little girl. It was a blast! The girl trip that we've always wanted with three of our four current generations of ladies among my family.  That being said, we literally got home with one day between us and back-to-school! Talk about flying in hot.

What else does back-to-school mean? Meal time chaos at it's finest. Add in a touch of being exhausted from the trip and you've got the perfect mix for bringing in my favorite wing mom. The Baroness...

Vegan Lentil Taco Salad Bowls

August 11, 2017 Amanda Plott
vegan-taco-salad.jpg

A couple of weekends ago we went to the local water park for some fun in the sun. And while there we all got hungry and one of the options that I saw floating around the park was a taco salad. I'm not about to lie. It looked like heaven in a tortilla shell, but I know all too well that most salads out there pack just as much (if not more) calories and junk in them than the other options on the menu.

That being said, it really put me in the mood for a good taco salad. But, I wanted to do it my way...

Instant Pot Summer Vegetable & Chicken Curry

August 4, 2017 Amanda Plott
instant-pot-summer-curry5.jpg

I've kind of completely and utterly fallen in love with my new pressure cooker, y'all. Before I got this baby, I was all about the slow cooker. But, now? Just toss it in the pressure cooker for a few minutes and you've got yourself a full on meal that would have taken HOURS in the slow cooker. And the best thing is, if you like a slow cooker - it can slow cook too! It's amazing for one pots too, like this curry right here.

Curry is another one of my favorite 'use up leftover' meals. No matter what veggies or meat you have on hand, you can most likely make a curry with it...

Caprese Omelette

July 27, 2017 Amanda Plott
caprese-omelette8.jpg

It's grocery shopping day, which means that I have absolutely nothing in my house other than the leftovers and things that weren't used up through the week. With a hungry household, what's a girl to do? Improvise!

Somehow one of the dinners that I had planned wasn't even made. What can I say? It's summer and we're flying by the seat of our pants here on somedays. A good thing for fun, but a bad thing for planning. Whatever caprese salad I had intended on making just didn't fit into our shenanigans... so, caprese style breakfast it is...
