Breakfast Egg Rolls with Sausage Gravy

I saw this fabulous idea a long time ago on Pinterest, and I just knew that I had to make a version of it for myself. I've never been one for frying things and I will do just about anything I can to lighten up food; whether it be lessening the calories, using more wholesome ingredients, or some other clever way in which I see fit.

These Breakfast Egg Rolls with Sausage Gravy are where it's at! This has to be one of the most tasty and fun breakfasts that I've put together in a good long time, and it's just a pity that I was the only one home this morning to enjoy them. Oh, well... maybe next time I'll have some company over to feed!...

I'm not sure what it is about this time of year that always gets me thinking about appetizers. Maybe it's all the holidays and parties going on. Of course, I'm always one that's ready to go big or go home; thinking outside of the box and keeping things new and exciting in the world of food. So, here we go!

It's no secret that deviled eggs are one of my favorite appetizers. They're easy, can be elegant or down-home, and are extremely versatile. Plus, who doesn't enjoy finger foods? That being said, you can't go around plain ole' jane ole' deviled eggs. At least, not around me. I'm always trying to think up fun ways to put a twist on this old comfort food classic...

Occasionally, for one reason or another, I have started going through to rework certain older recipes. Some of them needed photography updates, others were outdated in other areas, this one though... it needed a total overhaul. My way of cooking and my thoughts towards food have changed immensely over the years as I've grown and started to come into myself as a home cook and health nut.

I never did like the original pictures that I shot to pair with this recipe, and while the recipe tasted amazing... I knew looking back at it that I could do much better by my standards today. Since we're still in the midst of pumpkin season, I thought it would be the perfect time to blow the dust of this oldie but goodie...

Now, I know a salad isn't generally what someone might think of as being a tailgating or homegating food, but when you add 'steak and potatoes' to the phrase, it all starts to make a lot more sense.
