Baked Amish Overnight Oatmeal

February 19, 2018 Amanda Plott
amish-oatmeal10.jpg

As I think back, I'm not sure when or how I got turned on to Amish Oatmeal. But, I do know that it was pretty much an instant hit with my family. It's quick and easy to prepare with just a handful of basic kitchen staples that soak together overnight to bake up beautifully the next morning.

So, what is Amish Oatmeal anyway? Well, it's sort of a cross between oatmeal and bread pudding. Eggs, vanilla and milk are whisked together to create the 'custard' that the oatmeal is baked in.

There isn't much that's prettier than this hummus right here. I mean... look at it. It's perfectly gorgeous. Roasted beets make for the beautiful fuschia pink hue in this hummus that is sure stand out any time of year but especially around Valentine's Day.

Hummus is super easy to make, and it will save you a ton of money to make yourself too! Plus, you have complete control over what goes into it. And let's face it... It's just fun to eat pretty stuff. You eat with your eyes first...

Skinny Buffalo Chicken Spring Rolls

February 5, 2018 Amanda Plott
buffalo-chicken-spring-rolls2.jpg

Can you believe that it's been almost 5 years since I started The Skinny Fork? How exciting! 5 years can make such a big difference. I look back at old recipes when I make them again and often end up retaking the photos. With these Skinny Buffalo Chicken Spring Rolls being one of my favorites, I thought I would go back and blow the dust off and give it a bit of a facelift. As usual, the recipe is the same, though I did add pressure cooker instructions! Here's the original as written!

I've been going about this all wrong.

I've made buffalo chicken egg rolls about a million times now. And this past week when I was buying some egg roll wrappers, they were all sold out. Of course. Desperate, I asked one of the clerks who mentioned there were some other options in the frozen section...

Low-Carb Chicken 'Nachos' (Keto-Friendly)

February 3, 2018 Amanda Plott
chicken-nachos.jpg

With the Big Game coming up tomorrow I thought I needed to get another good game day recipe out. These Low-Carb Chicken 'Nachos' have been something that I've been working on for a month or two now, trying to get the spice level right and the cooking method down perfectly.

These Chicken 'Nachos' are really more of Chicken 'Not-Chos' since there is no chip involved here. Instead, the entire nacho is based on the pieces of chicken themselves. To pack in as much flavor as possible, I started these off with seasoning. A LOT of seasoning too. Let's face it, chicken breast can be a little moot. So, I wanted to be sure it had all the help that it could get here...

Instant Pot Steel-Cut Oatmeal

January 27, 2018 Amanda Plott
instant-pot-steel-oats6.jpg

Weekends are for being lazy, and there is truly no more of a lazy way to cook steel cut oats than inside of a pressure cooker. I got my instant pot back for my birthday I think and I am absolutely in love with it. Not only does it work as a pressure cooker, but also as a slow cooker; which saves me valuable cabinet space.

So, while I'm slumming around still in my PJs today I thought it would be the perfect opportunity to make some Instant Pot Steel-Cut Oatmeal for breakfast... around noon. That's still technically brunch, right?

Low-Carb African Peanut Stew

January 25, 2018 Amanda Plott
peanut-stew10.jpg

I've been wanting to make African Peanut Stew for a good long while now and since I'm soaking up every last drop of the 'cool' weather here in Texas, I thought there would be no better time than now. This stew is hearty. I'm talking... stick to your ribs and fill you up completely. It's a little bit of all the best things. Savory, sweet, spicy, salty, soft, crunchy...

Honestly, I really wasn't sure how I would feel about peanuts in a stew. It's never been something I thought of as being the main component in dinner. But, I was thoroughly impressed with how good it was. ...To the point, that I think this may go into my dinner rotation!...
