Baked Eggs in a Zucchini Nest

December 12, 2017 Amanda Plott
zucchini-nest-eggs7.jpg

Wakey-wakey eggs and bakey! This mornings breakfast is brought to you by, leftovers! Okay, maybe not exactly leftovers but an accumulation of things that I indeed had leftover in my fridge that went unused through the week in some way shape or form.

For instance, the original plan for the spiralized zucchini was for zoodles in a vegan Pho. The same goes for the mushrooms. I'm not entirely sure why the tomatoes were untouched, but somehow everything always works out in the end. Just like these Baked Eggs in a Zucchini Nest!...

Low Carb Keto (Meal Prep) Taco Salad

December 3, 2017 Amanda Plott
taco-salad7.jpg

Sunday is for meal prepping! Meal prepping is one of the best and easiest ways to set yourself up for success with healthy eating through the week. It's easy to find an excuse not to cook meal after meal. But, it's hard to find one when you've already put in all the hard work and effort.

My mom and I are planning to go low carb and keto for a month, starting tomorrow. So today I'm busy getting some things ready for the week to come. This week, our lunch will be these Low Carb (Meal Prep) Taco Salads. The idea came from my mom actually! When we were discussing low carb and keto friendly options she mentioned a specific way that she used to like eating healthy at a local tex-mex restaurant...

Nordic Nut & Seed Bread

November 19, 2017 Amanda Plott
nordic-bread10.jpg

If you're like me, you've got a stockpile of random nuts in differing containers that take up half of your pantry. Especially around the holidays. Every cookie, every recipe, everything you cook has a different sort of nut - and none of the recipes use up only and completely one entire bag of nuts. So, you end up with nutty chaos raining down on you from the pantry.

Well folks, here you have it. Finally, a way to use up all and any of those nuts that you may have hanging around. Not just that, but this also gives you a chance to clean up those seeds that have gathered in there as well!...

Collard Green (Tortilla-Free) Enchiladas

October 30, 2017 Amanda Plott
collard-enchiladas4.jpg

These enchiladas aren't quite naked. But, they are pretty close.

Over the past couple of weeks, I've gotten a lot of local collard green leaves in my farm box that I just wasn't too sure what to do with. They're HUGE leaves too, and while most people in the south chope them up and cook them forever... I really wanted to make as much use out of their enormous size as I could manage.

When in doubt, make it into an enchilada...

Skinny Zuppa Toscana

October 24, 2017 Amanda Plott
zuppa-toscana3.jpg

Okay, so there really isn't enough good things that I can say about this soup. I actually made my first attempt at this soup a few years ago. Long before I originally posted it here. My in-laws were in town and I knew that this soup from a well-known restaurant happened to be one of my father-in-laws' favorites. Since he's a health-conscious individual such as myself, I thought it would be fun to try my hand at making a healthier version of it for him.

I hadn't had the soup before, so I couldn't say at the time if it was anything similar to the one that he was used to, but he did have a couple of bowls of it for dinner! Me? I was anything but a fan. Why? One word. Kale.

Yes, I've ranted on before about my strange love/hate relationship with kale. And, this is basically where the hate part of that started...

3 Ingredient Pumpkin Noodles

October 13, 2017 Amanda Plott
pumpkin-noodles8.jpg

Pumpkin, pumpkin everywhere! My pumpkin game is strong today. In years past, I've made pumpkin flavored... almost everything. From mac-n-cheese to chili, and so much more. Today though, with a bit of some sort of light allergies among the household, I decided some noodle soup would be the best way to go.

And what's more comforting than a nice warm bowl of homemade Chicken Noodle Soup? You know the kind of soup. The kind where it's just a handful of ingredients and scratch-made noodles? The big thick hearty noodles that fill you up...
