Mediterranean Lunch Bowl

After this busy holiday weekend that was full of cooking out and even a few drinks, I was really looking forward to getting something fresh and green and clean in my system today. It's amazing how just a few guilty pleasures can leave you dragging behind, no matter how careful or conscious you are! Needless to say, I was well prepared with my shopping list having it's fill of mostly produce this week. 

This mediterranean lunch bowl really hit the spot, being full of bright veggies and protein too! I kept the 'recipe' rather light and simple since coming down off of a busy (and rather long) weekend leaves me scrambling to get everything back in order. So, this would make an excellent make ahead grab-and-go lunch for work too!...

Skinny Vanilla French Toast

With the onslaught of summer and my little one now home with me for duration of these long hot months, my morning routine has certainly shifted. Even with it's changes, there are those few staple things that always stay the same. One of those things if me starting my day off right with my morning cup of coffee. In fact, it's become common laughable knowledge around here not to attempt communication until I've had my java. Hah!

Once I have my coffee I start in on making breakfast for whoever happens to be around. On most mornings, it's just myself and my little girl. But, my place is sort of the middle ground for most of my family, so there's a handful of people that come and go on occasion; my lovely 'wild cards'. Naked Sriracha Turkey Burger

For a while now, I've been wanting to create a 'naked' burger. What's a naked burger? Basically it's a burger that is so good you don't need a bun. That's right. This is a bun-less burger! It sits here completely bare (except for a little drizzle of sauce) and couldn't be more proud of it.

Turkey burgers tend to get knocked on a lot with people making claims like they are dry or boring and bland. Honestly, I've not ever found that to be the case. It's getting warm here in Texas, though I'll be the first one to say that so far we've had a perfectly mild summer. Usually by now we are well into 100+ degrees days, and so far we've barely broken past the 90's. No, that's not a complaint either! It's these perfect summer days that I love to spend out in my backyard entertaining. Whether that means my little family or the whole lot of us.

Chocolate Chia Pudding

I'm up and at it this morning! It felt pretty nice being able to 'sleep in' to a ripe old 7 o'clock this morning. Truth be told, I wallowed around in the bed for another 30 minutes before I actually managed to peel myself up. It's been a busy few weeks around the Plott house between school coming to an end for the year, dance recital chaos, and a head cold that just won't quit.

Needless to say, I was ready to hit the kitchen today to whip up this tasty little number that I've had in my head for a while now. A few weeks back (maybe a month even) I tried out a new chia pudding that the little cafe/juice bar located inside my gym had started offering. It was pretty tasty and I was surprised with the actual 'pudding' like texture.

A lot of chia puddings out there have that tapioca texture. Which is just fine with me, but not always with everyone...
