Steamed Vegetable Dumplings

April 16, 2016 Amanda Plott

I've been debating buying a bamboo steamer for a good long while now since I've been in full on wonton mode, and there isn't any better (or healthy) way to make potstickers or dumplings other than by steaming them. Needless to say, I finally broke down and got the steamer. I love it too because I can use it to steam other things too, not just dumplings.

I need something for steaming tamales too! So this was a good excuse to cover all my steaming bases.

The first thing I wanted to make with my bamboo steamer was some perfectly easy vegetable dumplings. These dumplings seriously couldn't be more easy to put together, and I'd like to think that after sealing up my fair share of wontons lately that I've become a lot more proficient with it...

Skinny Baked Avocado 'Fries'

April 11, 2016 Amanda Plott

I think that I nearly bought my weight in avocados today at the store. And you know what? I'm okay with that! I'm rather avocado obsessed and I'm always on the hunt for new and interesting ways to incorporate them into my meals.

This week for lunch I thought I would try my hand out at making some better-for-you baked avocado 'fries'. Avocado slices that are coated in spiced up breading and baked to perfecting for a quick, warm, and delicious lunch...

Italian Baked Eggs

April 7, 2016 Amanda Plott

First of all... Happy 6th Birthday Lily!

With plenty of family coming into town this weekend and lots of birthday party plans, I needed a rather quick and easy breakfast that I could whip up this week. But, naturally I still wanted to have something that was real and healthy too.

Now, I'm the first one to admit that pretty much anything Italian is an instant win with me. So when I initially heard of Italian Baked Eggs, I was intrigued to say the least. Red sauce? For breakfast? How scandalous! ...I must try it!...

Crispy Tofu & Roasted Vegetable Buddha Bowl

April 5, 2016 Amanda Plott

It's National Soy Foods Month, and I couldn't be more excited. I've been working pretty hard lately to try and meet a more plant based diet. So to celebrate, I've created a perfectly light and flavorful plant powered Buddha bowl!

This Buddha bowl (or Hippie Bowl) has a base of purple cabbage, it's layered on top with roasted vegetables (brussels sprouts, butternut squash, and edamame) and crispy tofu fries that were paired with a perfectly spiced Skinny Sriracha Aioli - perfect for dipping! It's easy to make too! With just two baking sheets and the oven doing almost all of the work for you...

Skinny Chicken Lettuce Wraps

April 2, 2016 Amanda Plott

It's Take-Out Fake-Out time again!

Anyone who has ever been to any asian inspired restaurant will know what these are. It's something that I will always order from one of my favorite asian eateries. Chicken lettuce wraps have become a staple at such restaurants and for good reason too! These perfectly crisp and tasty lettuce cups are light enough to be served as an appetizer and yet filling enough that you could eat them as a meal.

They are rather versatile too! If you're wanting more heat, add some chili sauce or Sriracha. Need some more salt? Add in a touch more soy sauce.

I have to admit, I was a little apprehensive at trying my hand at these. My dad had made these a handful of times several years back, and to my recollection it took almost an hour of him dicing and slicing ingredients. Yikes! These though? Nothing like that!...

Homemade Skinny Nacho Cheese

March 29, 2016 Amanda Plott

Cheese is my Achilles' heel, there is no question about that. I've come to the conclusion that it is one thing that I am unwilling and unable to rid from my diet. I honestly think that if it were an option, I would live on the stuff.

Being a Texas girl and spending my fair share of time in San Antonio, I've come to know many a Tex-Mex. One could even go so far as to call me a Tex-Mex aficionado. A connoisseur of the Americanize and Texified variations of Mexican style foods. And as such, I know over the years that I've eaten my weight in nachos and nacho cheese.

So, today I decided to take some steps in lightening up and homemaking this classic nacho cheese sauce that we all know and love. Drool...
